What is the grape variety of the white wines of Sancerre and Pouilly Fumé?

It is the same as most Touraine appellation wines…
The answer

White Sancerre and Pouilly Fumé wines are made from Sauvignon Blanc

Sauvignon Blanc presents a very wide aromatic palette, which reveals complex and multiple nuances depending on the terroir. The finest Sauvignon Blancs from Sancerre and Pouilly Fumé tend to be mineral (recognizable notes of flint or gunflint). The Sauvignon Blanc grape variety is best known for dry whites, but it can also be used to produce sweet wines. The other AOCs using the Sauvignon grape variety are: Menetou-Salon, Quincy, Reuilly and Touraine. The Sauvignon Blanc grape represents about a third of the total production of white wines from the Loire, Sancerre and Pouilly Fumé included.
